Rocky Road

I’m almost laughing, perhaps I’ll allow myself a giggle when January 2011 is finally past…. it was quite the Rocky Road for our family and I certainly hope (and pray) that the road smooths out a bit.  So, about this Rocky Road recipe… I grew up with my mom making this and when my husband I moved to our “new” house 12 Christmases ago, I decided that I would make plates of treats for all of our neighbors (10 plates total plus a few friends). My mom suggested that I make this Rocky Road recipe, because #1 It’s easy, #2 It’s almost fool-proof, and #3 It makes a lot (plus, it tastes really yummy! — ) Thus began the tradition of making Rocky Road candy.  I was so busy making/decorating sugar cookies this past Christmas that I did not deliver goodies to my neighbors (after 11 years, I’m sure several were a bit surprised??) Anyway, our Christmas card turned into New Year’s Cards this year and since today is Jan. 31st, I was determined to get the treats finished & delivered by the end of January. Happy New Year 2011 ~Enjoy!!

  • 2 cups (12 oz. pkg.) semi-sweet chocolate chips
  • 2 tablespoons butter
  • 1 (14 oz.) can Sweetened Condensed Milk
  • 2 cups Dry Roasted Peanuts
  • 7 cups miniature marshmallows
  • LINE 13 x 9-inch baking pan with wax paper, extending paper over edges of pan.
  • MELT chocolate chips and butter in heavy saucepan over low heat with sweetened condensed milk. Remove from heat.
  • COMBINE peanuts and marshmallows in large bowl. Stir in chocolate mixture. Spread in prepared pan.
  • CHILL 2 hours or until firm. Remove from pan by lifting edges of wax paper; peel off paper. Cut into squares
This recipe is the same as the Eagle Brand Condensed Milk recipe.… your choice on which brands to use; the milk, the chocolate, the butter, the peanuts & the marshmallows.  My advice – quality ingredients = quality results!!…  Be VERY careful not to burn (over heat) the chocolate or the texture will be – bleck!!
