When making pie dough from scratch (see this post), typically there will be some left-over dough. My grandma always made cinnamon roll looking cookies… Roll out the dough into a rectangle (you can trim it to make it look more exact or leave it as is) Then, sprinkle cinnamon sugar over the top of the rectangle.
Roll the rectangle up (like a roll of wrapping paper/plastic wrap etc…)
Slice into circles.
Place onto a baking sheet – Bake @400 for 20 minutes (until slightly browned)
